New research suggests that exposure to wheat polypeptides (chains of amino acids) may provoke development of type 1 diabetes. In the Ottawa Hospital Research Institute study, half of 42 diabetics had abnormal immune responses to wheat polypeptides. According to the research, this may show that people who are genetically predisposed to wheat allergies could be more likely develop an imbalanced immune system, including autoimmune diseases like diabetes.
